Can you believe my mom never made tuna casserole? My stepmom did, though, and I recently stumbled on the old recipe card I’d written for it back in high school. We called it “5 can casserole” and it was a simple, comforting and economical meal, using tuna, soup and chow menu noodles.
Tuna noodle casserole was on the table regularly growing up. I remember one time my mom and I sitting at the table, just the two of us, and nearly eating the entire casserole. It was so good...a real taste of home.
I am infamous in my family for hating to eat fish, yet one of my most favorite dishes to eat when visiting my dad's house was tuna noodle casserole - the ubiquitous 80s version made with canned tuna, egg noodles, cream of mushroom soup, and peas.
One day it dawned on me that TUNA IS FISH, and I was GOBSMACKED. Confused. Embittered even.
"What did you think it was?" I was asked, but I had no answer. For some reason, I simply did not know (or register) that tuna is a fish. Maybe that "chicken of the sea" marketing worked, or maybe I was just a dumb kid. It's been a tough meal to swallow ever since.
